Dinner Boil 2 pounds of cheese tortellini & drain. Meanhwile cut 1 pound of chicken breast thin lengthwise to make thin cutlets & season chicken with salt, pepper & garlic powder
Brown the chicken in 1 T butter with 2 T olive oil in a non stick skillet
Remove the chicken from pan then add 1 T butter & 1 clove garlic minced then stir in 1 T flour add in 1 pint of half & half & enough crushed tomatoes to make the sauce pink (about 2/3 c). Salt & pepper to taste & add 1/2 c of pecorino romano cheese & 6 fresh basul leaves.. Stir until thicken & add the tortellini. Slice the chicken into strips & add in as well. (if you want this wetter add more 1/2 & 1/2 ..if you like more tomato add more crushed tomatoes..) the flour added to this keeps you from having to use extra butter & heavy cream..

News Another handy tool I have found that really helps is myplate at livestrong.com.. You put in your weight & weightloss goals & it comes up with a daily calorie target for your day. Then as you eat you enter what you’ve had so you can keep track of your food intake..its also a great motivator to exercise because you can eat more when you do..& its FREE

Dinner,
Lunch Baby Spinach, Slivered Almonds (toasted in the oven lightly golden), Craisins & Grilled Chicken Breast sliced in strips
Dressing: 2/3 cup grapeseed oil, 3 T apple cider vinegar, & 3 T sugar or (2T honey) salt & pepper to taste…(enough dressing for 4 people)
I didn’t put amounts for the salad things because it’s up to your taste
Also you can use any oil you choose I recommend grapeseed, coconut& olive oil

Dinner 2# Chicken breast or Lean steak meat (go grass fed if you can)
3 cloves of chopped fresh garlic
1/4 c chopped fresh cilantro
juice of 2 fresh limes
Sea salt & pepper
1/4 cup olive oil
Mix together & pour over meat & wrap & marinate 8 hours or overnight
Grill meat (yes you can grill in january)then slice in chunks or strips
Grill or sautee sliced peppers, onions, zucchini
Heat in a dry fry pan white corn tortillas or tortillas on both sides.
Serve with salsa, fresh avocados, cilantro, fresh lime & a tiny bit of cheese

Desserts Here are 5 simple steps to being healthy this year. Start off with 1. & don’t move on until you’ve successfully committed to it..& so on too much change too fast often leads to defeat
1. Drink water (at least 8 glasses per day. I strive for 1/2 my weight in oz as per my nutritionist)I know it’s hard; I add some fresh lemon juice to mine..
2. Add 5 servings of fresh fruits & fresh or frozen veggies each day.. I make homemade smoothies, fresh soups loaded w/ veggies, set out veggie & fruit tray on the counter & make my dinner plate 1/2 veggies (watch for hidden calories in dips & premade smoothies)
3. Ditch sugar!!! sugar is good for no one..
4. Ditch all processed food..it’s not real food & does little to nothing for you but make you sick
5. Move your body! Walk, run, dance, jump rope, swim ..something.. Find what you like. Don’t go for the latest craze do what you enjoy.. Start off small & build up..

News I just love a new year..New opportunities, a fresh start & a reason to refocus.. This year I want to Be joyful, Be healthy & Be grateful.. Being joyful is a choice we choose to make each day in every cicumstance. Negative thoughts bring us down & rob us of many blessings… Being healthy is a choice also we make choices everytime we eat or drink. It occurred to me that its ridiculous how helpless we act.. It’s actually quite simple eat less & move more… Eat more foods that nourish you. Being grateful is also a choice… There is always a gift waiting to be unwrapped each day..

Breakfast 1 stick of butter & 1 cup brown sugar melted together in a pot until syrupy. Pour into a greased 9×13.
Line 9×13 with 10-12 slices of bread. Beat 6 eggs, 1 1/2 cups milk, 1 tsp vanilla & a sprinkle of cinnamon. Pour over bread. Refrigerate overnight. Bake 350 45 min. * add some pecans to the syrup for something even more festive

Holiday Dinner 1 cup soft butter, 1 cup sugar, 2 eggs separated, 1/4 c milk, 2 cups flour, 1/2 c cocoa, 1/4 tsp salt. 1 cup chopped nuts (I like pecans or hazelnuts)
Filling: 24 caramels & 4 T cream
Chocolate Drizzle: 2/3 cup melting chocolate (or chocolate chips with 1 1/2 tsp shortening)
Cream butter & sugar together, then add egg yolks, milk, flour, cocoa & salt. Make into balls & dip in egg white & then dip in nuts. Place on a cookie sheet. Make a thumbprint. Bake 350 for 10 minutes.
Meanwhile melt caramels with cream on the stove on medium low. Creful not to burn. Fill the centers with a bit of caramel. Then melt your chocolate in the microwave & make a thin drizzle over the cookies.

Holiday Dinner This is a great teacher gift idea
1 package milk chocolate morsels, package of peanut butter morsels
1 container of salted peanuts & 1 bag of broken up small pretzels..
Melt the morsels in the microwave starting with 1 minutes then 30 sec. additonal until melted. Then add the amount of peanuts & pretzels you’d like. The pure the mixture onto a cookie sheet lined with wax paper. chill.. Then break up into pieces…

Holiday Dinner 1 Ham (your favorite is fine: spiral, boneless whichever)
1 2 liter bottle of Raspberry Ginger ale
1 jar of raspberry preserves
Pour 1/2 bottle of soda over the Ham (or til the soda is 1 inch high). Cover & Roast until done (according to the packaging). Allow to rest at least 20 minutes. Then add 2 cups of the remaining gingerale in a pot with the preserves & dissolve into the soda..Slice ham & pour the sauce on top.
