In our new home we have asparagus patches (yay!) So I took about 1 1/2 pounds of asparagus.. (the thicker kind )& cut them up in 1 inch pieces and placed them in a shallow baking dish & covered them with a cheese sauce, some grated parmesan & crumbled butter crackers… Baked uncovered until golden brown about 25-30 minutes @ 375
Cheese sauce: 2 T butter melted in a small pot then stir in 2 T flour & add 1 – 1 1/2 cups (start with 1 add more as needed) of milk with 1 cup cheddar cheese added cook until thick & bubbly
* this works great with artichoke hearts, cooked broccoli, chard & spinach too
