I am smoking brisket for a dinner tonight and got this crazy idea to smoke our chicken for dinner. I brined the chicken in 4 cups water 1/4 c pink salt and 1/4 c brown sugar and some garlic for 2 hours. I then wrapped the chicken breast ( 1/2 in thick chicken breast ) with a slice of bacon and put them in the smoker for 2 1/2 hours at 225. I used applewood wood chips. It turned out so tender and juicy
