Bake it once serve it 4 times

Our local country store had chicken roasters on sale for 99 cents/pound. They were big (8 pounds) I thought a nice roasted chicken sounded good with some mashed potatoes.. Well we only ate about 1/3 of the chicken so I pulled all the meat off & saved it for another meal. The next day I boiled the chicken carcass  in a large pot with water, celery, onion & carrot & made some really good chicken broth. To which I made chicken corn noodle soup (Chicken broth, corn, noodle & some chicken meat) we ate for lunches. I had the chicken breast yet and we love homemade tacos. 2 days later I took the chicken meat  & put it in a pot with some broth & cumin, garlic powder & a couple tablespoons of my fresh salsa, & we had pulled tacos with corn tortillas, black beans & Spanish rice with cilantro.. Well we barely dented that & had the leftovers repurposed into build your own mexican chicken rice bowls.. It’s always good to start the week off with a meal you can get several meals out of. Please note: I didn’t keep reheating the same chicken that can cause food to spoil. I sectioned it off into separate meals” dark meat for the soup” and only made 1/2 of the chicken breast. Things like rice & beans really go far.. This is great to the grocery budget!
