Baked Oatmeal

This is a Lancaster Co. favorite. We love it.

1/2 cup brown sugar, 1/2 c white sugar (you could also use maple sugar or coconut sugar) , 1/3 c coconut oil (or oil of choice), 2 eggs, 2 tsp baking powder, 1tsp salt, 1/2 tsp cinnamon, 1 cup milk,3 cups quick oats, 1 shredded apple.. Sugar for on top. Mix everything together in a ball & pour into a greased baking dish. Bake 350 for 30 minutes until lightly browned around the edges.
