My girls both play travel softball. To help earn some money toward the fees we do “take out” dinners. This month we served baked rigatoni. Rigatoni is a tube shaped pasta, like ziti, but it’s fatter. I start by making a meat sauce: 1 pound lean grounded beef, 3 cloves garlic minced, 3 T onion, 2 can crushed tomatoes with basil. In a pot, brown the meat then drain add the onions & garlic & simmer 5 min (on med/high) add in your tomatoes. Cover & simmer for 30 min on med/low. Season with salt & pepper & 1 T sugar.. In another pot, boil your rigatoni according to the box. Drain. Then toss the rigatoni with 2/3rds of the sauce & pour into a buttered casserole dish. Top with shredded mozzarella cheese. Bake until golden brown 350. Serve with grated Parmesan Cheese. I save some sauce because I like to add more sauce when I serve it. Make this GF by using GF pasta
