Breaded zucchini was a typical summer day lunch with Nan.. that & tomato sandwiches. I don’t know if it was because Nan grew up in the depression & war eras but she knew have to keep it simple. I just feel sometimes simple makes it better.
Breaded Zucchini: Slice zucchini into 1/2 in wheels or on a bias, beat a egg with mix with a bit of milk in a shallow bowl & add some salt & pepper, in another shallow bowl put seasoned bread crumbs & 2 T flour. In a pan ( I use a cast iron pan) put in some frying oil, when hot (but not too hot) Dip zucchini into egg mixture then bread crumb mixture & pan fry on med/high until ac deepgolden brown. Season with a little salt & enjoy
Tomato Sandwiches are simply white bread with mayo & nice thick slices of garden tomatoes topped with salt & pepper & a slice of American cheese if you like..
