With the abundance of zucchini in the summer we eat this alot….
1 large zucchini sliced (skin on) about 1/4 in thick
1/2 cup milk
2 cups seasoned bread crumbs
1/4 cup flour
Oil for frying
Mix the egg & milk together in a bowl & set aside. Then mix the bread crumbs & flour and set aside.. Heat oil in a large fry pan enough oil to cover the pan to 1/8 in.. Dip the zucchini in egg mixture then the breadcrumb mixture…brown on both sides on medium heat… Drain on a plate with paper towels…..
