As a Christmas tradition, I have some of my very dear friends over for a breakfast. These lovely ladies have gone above & beyond to make me feel welcomed as family in Lancaster Co. They are a very special part of my community here.. But what makes their friendship even sweeter is that they are fellow “foodies”. So I knew I wanted to try something a bit “out of the box” I saw on the cooking channel a pizza place in NYC that made a breakfast pizza & I thought…why not? I made my pizza dough: 1 1/2 c warm water, 1 T dry yeast, 1 T sugar dissolved together then added 3 1/2 c bread flour, 1 T salt, 3 T olive oil & I mixed it together by hand (or you could do a standing mixer) Allowed to rest 1 hour. Then I separated with dough into 2 balls & rolled it thin & placed each on an oiled baking sheet dusted with corn meal. Next, I topped the pizza with slices of provolone & some partially fried bacon & sausage. Then I baked the pizzas at 375 for 10 min.. then I removed them from the oven & cracked 3 eggs ( 1 at a time) for each pizza and placed them on the pizza (spaced out) and put the pizza back until the cheese was golden & the egg was set up but the yolk still soft. Then I ran my pizza cutter through the yolk & served! Ingredients: 1 1/2c warm water, 1 T dry yeast, 1 T sugar, 3 1/2 c bread flour, 1 T salt, 3 T olive oil, corn meal for dusting, 12 oz bacon slices, cooked sausage, 1 # provolone slices, 6 eggs
