4 chicken breasts cut in half lengthwise & pounded thin, 8 slices of cheese of your choice (gruyere, swiss, cooper, cheddar) 2 cups chopped cooked broccoli, 1 large egg, 3-4 c crushed potato chips. Place 1/2 slice of cheese on top the chicken top with broccoli & then the other half of the cheese. Fold the chicken over & secure with a few toothpicks, Repeat with the other chicken breasts. Dip in the egg on both sides & then in the chips. Brown in some oil on both sides. Bake at 375 for 20-25 min… I was hungry for chicken stuffed with broccoli but being gluten free now I cannot eat the breading so I used what I had available chips crumbs.. (You could use GF rice krispies too)
