I LOVE SUMMER!!! grillin’ out, fresh produce ..what’s not to love.. Grilled Chicken Breast: 2# Chicken Breast marinated in 2-3 T apple cider vinegar, 1 T sea salt, 1/4 tsp pepper, 1/2 tsp adobo seasoning. (Marinate at least 1 hour) served over rice pilaf: 1 cup parboiled rice sautéed in 1 T butter, then add 2 cup chicken broth, steam 15 minutes covered. I served this topped with Bruschetta: 1 large tomato diced with 3 large basil leaves chopped, salt & pepper, 1/2 tsp oregano, 1 minced garlic clove & 2 T olive oil.
