Cauliflower Au Gratin

006I just made this for Uncle Terry’s Christmas open house at the horse farm. It was such a hit I thought you might like it too..

Steam 1 large head of cauliflower until fork tender, you want to steam it whole ( only cut out 1/2 of the core), Then put the cauliflower into  a baking dish. Make a white sauce of 3T butter & 4T flour in a pot whisking them together then add 2 cups of milk. Stir until hot & add 2 cups cheddar cheese stir to thicken & then pour over the caulilfower. Finally melt 3 T butter in a frying pan & add 1 cup seasoned bread crumbs & stir until combined. Spoon the crumbs over the cauliflower. Bake 425 until golden brown.. If keeping it whole is tricky you can just make them into florets too. Also you can make this ahead & brown it when you are ready to eat.
