2 Pounds Chicken Pieces
1 large onion sliced
8 oz mushrooms sliced
1 large pepper sliced
1 jar of peeled tomatoes
2 T olive oil
3 cloves of garlic chopped
Fresh Rosemary & Salt & Pepper
A splash of Marsala wine
Brown chicken pieces in olive oil. Remove and place in a roasting pan. Then add wine, garlic , onion, pepper, mushrooms to the pan & sautee until light brown. Pour over the chicken pieces add the tomatoes , salt, pepper & rosemary. Bake 1 hour at 350 covered…also great if you add potatoes or diced peeled rutabagas or served over rice
