Chicken Chilli

After a day of making salsa, I was in the mood for Mexican, but a healthy lighter Mexican. So I came up with this pot of yumminess. 2T olive oil, 2 pounds of ground chicken, 1- 28 can crushed tomatoes, 1 28 can diced tomatoes (you can use fresh 3 1/2c) 1 bunch of cilantro, 2 garlic cloves, 1/2 c onion, 2T cumin, 2T chili powder, salt & pepper, 1 T granulated garlic, 1 jalapeno (optional) 2 cups chopped zucchini. I browned the chicken in the olive oil, added the crushed tomatoes & then made a “fresh salsa” with diced tomatoes, onion, cilantro, jalapeno & garlic in the food processor & added that into the pot. I added my dry spices & simmered covered 30 min. & then added the zucchini..& simmered 30 more min. You can add beans, peppers whatever you like. Serve with rice if you like or sour cream & salsa
