Layered Chicken Cordon Bleu & Rice

1 1/2 cups rice
Gravy: 3 T butter, 3 T flour, 3 cups chicken broth & 2/3 cup milk
3 Boneless skinless chicken breasts cut lengthwise in 1/2 to make them thinner making 6 slices of chicken
1 egg mixed with 1/2 cup milk, 1 1/2 cups flavored bread crumbs & oil for frying
6 slices of a thin cut deli ham & 6 slices of cheese of your choice
Put the rice in a 9×13 baking dish. Next make the gravy: na frying pan melt butter then add the flour & stir then add broth until thickened then add milk…pour over rice & stir to combine the rice & gravy
Next step: dip your chicken in egg mixture on both sides then bread crumbs. Heat oil in you frying pan & brown chicken on both sides… (not too much oil just enough to pan fry)
Arrange the browned chicken breasts on top of the rice then top with the ham & cheese. Cover & bake for 1 hour.. or until the rice is cooked… You can add a little more broth to the rice if it absorbs it all… You want the rice a little creamy… You can make this ahead of time…*Just a note: Occassionally this can get a little dry I like to check it when it’s just about done & see if it’s creamy or has absorbed the liquid if it seems dry I add some milkor broth which ever I have..
