Chicken Cutlets

2 pounds of raw boneless skinless chicken breast sliced thin or boneless chicken tenders ( you can used dark meat too to make a fried chicken)

2 eggs beaten

1 cup flour (of choice unbleached works best)

4 T Lawry’s poultry seasonings & rub ( I get at Sam’s) or fried chicken seasoning

Oil for sauteeing..I like coconut oil best

Heat oil to cover the bottom of the pan, mix the seasoning & flour together . Dip chicken first in egg then in flour making sure both sides are coated. Then fry in the oil until golden brown on both sides & serve…
