I could change the name of this site to “healthy made simple” this year. As I make a push to really reclaiming our family’s health, I will be focusing on super easy BUT super tasty & super healthy food. I just sort of made this up for lunch. I sautéed 1/2 small onion sliced & 1/2 red pepper sliced in some coconut oil, and then added 1 sliced garlic clove & ginger, then some sliced chicken breast (leftover from last night), then I just used a veggie peeler and made zucchini noodles (long peels) I stirred that around and then add a good squirt of sriracha, and a dash of soy sauce alternative (but soy is fine), I topped it with some lime & chopped cilantro & almonds.. It was DELICIOUS & it took about 10 min total. This is packed with protein, veggies & some healthy fat. You could add sprouts & eggs too
