This is a new family favorite!!! A few weeks ago at small group, my dear friend Mary made this & let’s just say we’ve made it 4 times since.. (yes, it’s that good). What I love about this is it’s a great starter to many recipes ; burritos, tacos , taco salads, enchiladas.. We had it as a build your own rice bowl. This is my version: 2-3 pounds boneless skinless chicken thighs, 1 T oil, 1 tsp chili powder, 1 tsp granulated garlic, 1 tsp onion salt, 1 tsp cumin & 1/2 tsp pepper. Put everything into a Ziploc bag and allow to marinate over night or I like to freeze a bunch. Then you grill or broil the chicken thighs until done. Slice and serve with steamed rice, tortilla chips, guacamole, fresh salsa, lime, cheese, sour cream…whatever your family likes..
