Christmas Crack (aka Caramel Chocolate Popcorn)

Think the title is a bit much? Well try the recipe & see for yourself. I got this recipe from Baked Explorations cookbook by Matt Lewis & Renato Poliafito I adapted it slightly to make it even naughtier (hey it’s the holidays, almost)  1  1/3 cups of yellow popcorn (divided in 2- 2/3 c for popping 2 batches) 4 -6 T coconut oil (or any oil for frying I just think the coconut adds a great flavor), 2 sticks butter, 2 cups light brown sugar, 1/2 c corn syrup, 2 T molasses, 3/4 tsp baking soda, 1 1/2 tsp vanilla, 1 1/2 cup salted peanuts, 8 oz of melting chocolate ( I like wilbur) 2/3 c toasted coconut.  Pop the popcorn in 2 batches. I did this in a pot 2-3 T of oil at a time 2/3 cup popcorn. You can just do hot air popcorn but I do not recommend microwave bag popcorn. Salt this popcorn when it is finished.  Preheat oven to 250. In a pot melt butter, then add brown sugar, corn sugar & molasses & stir gently on medium/low heat. When it reaches 240 degrees remove from stove & add baking soda & vanilla & stir. Pour over the popcorn & then add peanuts & stir.  Place the popcorn in a roasting pan & bake stirring every 15 minutes. Bake about 45 min total. removed from oven add the toasted coconut. When the popcorn has cooled  melt the chocolate &  drizzle.

Allow me to say that I to do NOT usually allow such a sugary display in my house. But sometimes you have to say ..what the hey, it’s Christmas (unless you are eating this like me on 11/10.. then you have no excuse)
