This is a very healthy version of the deadly old cream soup also you can substitute cauliflower and even a mix of veggies
1 pound bag of frozen broccoli florets (preferably organic)
1 carton of chicken broth (32oz)
2 T butter
1 stalk celery diced
1 carrot diced
1 small onion diced
Sautee celery, carrot & onion in butter in a soup pot. Add broccoli and cover the veggies with chicken broth. Cover & simmer. When the vegetables are very soft. Blend them in a blender or food processor and return to the pot. Serve.. May add salt& pepper if needed
