Despite my red hair.. no…I am not irish but Nanny always insisted on having this dish on St. Patty’s day.. far be it from me to argue with nanny..(also it’s time to plant peas & onions fyi)
1 flat cut corned beef brisket (3-4 # for 5-6 people)
1 head cabbage cut into quarters
5 -6 potatoes peeled & cut in half if they are large
3-4 large carrots peeled & cut in 1/2
Place corned beef in a large pot with a lid & cover with water just enough to cover the meat. Start on medium high to get a gentle boil then reduce heat & simmer on medium low for about 2 1/2 -3 hours depending on the size of the meat. Then add the potatoes, carrots & cabbage.. And simmer 30 minutes more & turn off heat and steam for 30 minutes… Once everything is fork tender it’s ready. You’ll want to slice the beef against the grain ..the grain is the lines along the meat. You never cut along the line always against them. The meat should almost be falling apart…
