Put 1 pound of chicken breast or thighs into a crock pot. Cover with 2 quarts chicken stock/broth. Add 1 14oz can of diced tomatoes with chilies. 1 minced garlic clove, Add 1 T cumin. Juice of a lime. 1 cup uncooked rice, 1/2 cup chopped cilantro. Cover & cook on low for several hours. When chicken is cooked, shred & add corn tortilla strips ( I used 4 corn tortilla cut into strips). Salt & Pepper to taste & top with cheese of your choice. Cook for 30 more min.
