Inspired by Diners, Drive-in’s & Dives..this is for my husband who requested these this morning. 12 T softened butter creamed with 1 cup sugar, then add 2 eggs & mix Meanwhile sift 1 c. cake flour, 2 c. of all-purpose flour, 1 T baking powder, 1/4 tsp baking soda, 1 tsp salt & then add to butter mixture then add 1 tsp cinnamon & 1 cup milk. Mix just until blended( do not overmix) Scoop in muffin pans bake 350 for 25-30 min. When done baking melt 1/2 stick of butter & drip the muffins in the butter & then roll in 1 cup raw sugar mixed with 1 tsp cinnamon. (You can use all all-purpose flour if you do not have cake flour & you can use white sugar if you do not have raw) This recipe makes 15 muffins
