Someone very special to us requested some recipes to make in her dorm with a mini frig & a microwave:
Burritos: Precooked grilled chicken chopped(available at most stores), shredded cheese & black beans wrapped in a tortilla… Microwaved for 1 minute..Topped with salsa…you could just do beans & cheese too… you could top with black bean soup or even enchilada sauce too
Buy a rotisserie chicken at the store & keep it in the mini frig….you can slice for wraps with cheese, lettuce & tomatoes, make a chicken salad with mayo, toffeed nuts & some grapes…
Chef Salad: Buy some of your favorite lunch meats and some nice salad mix, raw veggies & your favorite dressing.Ggreat as a wrap too
Meatball Subs: premade meatballs, some tomato sauce topped with mozzarella cheese….heated until hot & melty
Tomato / Mozzarella Sandwiches: Italian Bread with sliced mozzeralla, tomatoes, onion & italian dressing
Pizzas: Flat bread or even foccacia bread, olives, sauce (tomato or even try pesto) topped with favorite toppings & cheese… melt in microwave…
Tuna Melts : mix tuna with mayo & your choice of toppings(like chopped pickles or celery) top with cheese & melt…
If you have a hot plate you could also make omelettes & stir frys too…
I cringe in suggesting premade things (you know my convictions) try to pick the healthiest options you can but I know you need to eat this semester …. Try to avoid preservatives & artifical colors ..if you do use your microwave do not microwave with plastic plates or wraps …I’ll see what else I can think of
