Egg roll in a bowl (Farmer’s market find)

As I shared yesterday we are now eating our way through the farmer’s market finds. Today I made egg roll in a bowl. This is a “Trim Healthy Momma” recipe that I have adapted. I used Napa cabbage because that’s what I had but white or green cabbage is fine. A great cheat is the bags of coleslaw mix in the produce section.

1# ground pork, 1 head of shredded cabbage, 1-2 shredded carrots, 2 cloves of garlic,1 small onion sliced, 3-4 T soy sauce or aminos, 1T arrowroot (or corn starch mixed with 1T water) 2-3 T oil.

Heat oil in a frying pan and sauté the pork until no longer pink, add in the garlic & onion, stir 2-3 min add in the cabbage & carrots. Sauté until the cabbage is tender then add in your soy sauce and in your arrowroot. Stir 2 min and you are done. Garnish as you like. I have a huge cilantro lime problem so I like to go with that. And then that made me hungry for Pad Thai so I may end up making a low carb/gluten-free pad Thai version of this.
