This just got a thumbs up from the family:) 1 pound lean(grassfed if you can) beef cooked seasoned with 1 T each cumin & chili powder. In a baking dish start with enchilada sauce as your base, then a layer of corn tortillas, then refried beans or black bean dip, then1/2 of your beef, then , enchilada sauce, shredded cheese, then tortillas, beans, beef, sauce, then cheese again then top with tortillas, sauce & cheese Bake uncovered 400 until bubbly. I used 28 can of enchilada sauce (no msg) & mexican cheese. You can add rice to this too if you like. fyi this is gluten free. You can sub in cooked chicken or pork too
