Family dinner with Dad

Family means everything to me. Since moving out to Lancaster county, I don’t see my family often but when I do it’s a time to cook all of our  favs. Yesterday dad came to visit & dad loves the Italian stuff so I made rustic meatballs, fried eggs in tomato sauce, breaded zucchini  & eggplant parmesan..

Eggplant Parmesan: Eggplant peeled & sliced lengthwise, dipped in a beaten egg & then dipped in Italian style bread crumbs & then pan fried until golden brown.. Topped with tomato sauce & mozzarella cheese & baked covered at 375 until cheese is melted & bubbly 40 min.

(I got my eggplant & eggs from a farm stand ..which makes this even more special.. I like farm to table)

Eggs in the sauce is a Sicilian thing my mom always did ..don’t knock it til you try it.. Simmer your tomato sauce in a pot. Meanwhile heat a few Tablespoons of olive oil in a small frying pan & crack an egg into the oil. Once it turns white fold the egg in half covering the yolk. Flip the egg when the edges of the whites start to brown.  Cook 1 minute then add to the sauce.. Repeat as needed..Simmer 15-20 minutes
