French Onion Soup

So my sweet daughter asked me to make French Onion Soup.. I adapted this recipe from Tyler Florence. As she was eating this she said, “O mom, I feel like I am in Paris in a café while it is raining sipping this soup”..

4 T butter, 3 T olive oil, 2 large sweet onions sliced, 1 T sugar, 2 cloves of garlic sliced, 2 tsp  dried thyme,2/3 c red wine, 1 quart chicken stock & 1 quart of beef stock. Put the butter & oil in a pot, add the onions & sugar & cook on medium until the onions get caramelized. Add the thyme & the wine. Simmer 2 minutes, add the broths. Cover & simmer 45 min. Salt & pepper to taste. Just before serving slice some Italian bread & top with provolone or gryuere & place in the broiler until golden brown. Ladle soup into a bowl  & top with the cheesy bread
