Homemade Chips & Fresh Salsa (basic recipe plus variations)

3 large tomatoes diced (try to find local if not go vine ripened for max flavor)
1 green pepper diced
1 jalapeno diced
2 cloves of garlic diced
1 small onion diced
1 bunch fresh cilantro chopped
juice of a lime
Salt & pepper to taste.. Mix all ingredients in a bowl allow to sit for at least out for an hour before serving
Variations* add drained black beans, corn, or even diced peeled cucumber
Homemade tortilla chips: Place 1 quart of oil in a pot & heat on medium high heat (not on high or your oil will be too hot) Meanwhile take fresh corn tortillas & cut the stack in half & in half again making wedges.. to test oil place 1 tortilla wedge into the oil if it bubbles up the oil is ready if it sinks it’s not… fry until golden brown & drain & salt lightly
