I just love when cousin Mark comes to visit.. He appreciates good country cookin’ just like I do (so there is always an exchange of recipes).. Yesterday Mark shared this recipe with me.. I love how simple this is and it works great for a no fuss breakfast that seems like it would be a little fancy. The recipe comes from allrecipes.. german pancake II.. I made it as the recipe directs but may play with it a bit next time: 1 cup milk, 6 eggs, 1 cup flour, 1/8 tsp salt, 1/2 stick of butter. You bake this in a cast iron pan or a baking dish. Put the butter into the pan & put into the oven & preheat to 350. Meanwhile beat eggs in a bowl with the remaining ingredients. When your oven is at 350 pour this into the pan and bake for 30-40 min until golden brown. This puffs up & then will deflate when you pull it out. Serve with powdered sugar & syrup.. I may add a little vanilla & some sugar to the batter next time..But this is a great recipe! Tastes like French toast to me.. I served this will bacon for a nice salty/crunchy/sweet combination
