1 pound green bean snipped & steamed until al dente (not too hard/not too soft) Immediately after steaming put them in ice for a nice green color
1 pint cherry tomatoes sliced in half, 1/2 diced peeled cucumber, 1 diced yellow pepper, 1/2 cup shredded carrot, 1/2 cup toasted slivered almonds all tossed together & topped with Citrus Vinaigrette : 1/4 olive oil, 2 T fresh lemon juice, 2 T fresh orange juice, 1 tsp celtic sea salt ( or kosher salt) & 1/2 tsp pepper, 6 basil leaves chopped… Mixed together & stirred into salad…Make it an entree by sering grilled chicken breast or turkey breast
