In a bowl dissolve 10 oz warm water & 1 T dry yeast with 1 T honey
wait 10 minutes
Add 3 -4 cups of unbleached flour (I use organic & can easily substitue 1/2 spelt flour) Start with 3 cups add more as needed depending on humidity
2 T oil
2 teas of salt
Mix together until smooth. (I love my kitchenaid mixer for this with the dough hook) You may need to add a little more flour so the dough isn’t too sticky but you don’t want it super dry either. Form into a ball & place into a bowl & cover with a towel. Let it raise 1 hour. Roll out on a cookie sheet greased with olive oil
Top with favorite sauce & topping..let it sit. Preheat grill and place the pizza (pan & all ) on the grill on medium to medium low heat close lid. Turn the pan every couple of minutes…It’s done when the cheese is lightly browned
