Ham & Lentil Soup with Greens

*Note if you do not eat pork just leave out the ham… Simply use 6 cups chicken stock/broth
Simmer 1 ham hock in 6 cups water for several hours on low
Sautee 1 diced onion, 1 minced garlic clove, 1 diced carrot & 1 stalk diced celery in 2 T olive oil until tender
Then add to the ham water
Also add 1 cup dry lentils, 1 bay leaf, 3 cups chopped greens (kale, collards, swiss chard or spinach), 1 diced peeled potato & 1 cup crushed tomatoes
Cover & simmer until all veggies are cooked.
Remove ham hock & take meat off bone & place into the soup.
Add salt & pepper as needed
