Well, we are trying to not eat out. To be honest it’s so expensive & I usually end up with food regret. You know what I mean ordering something & being less than thrilled with it ..wishing I had ordered something else..then getting the bill & Yikes.. We recently were on vacation in the FingerLakes & we ate a nice Brew Pub and everything was an extra fee..You know what I mean $3 sodas add $3 for a side with your sandwich..well we like our onion rings here and last night I decided why not do “dinner out at home” I made a family favorite Cheeseburger Sub & Homemade Onion Rings..I use grass fed farm raised beef & grilled the burgers . I filled a long french baquette with the burgers, cheese, lettuce tomatoes & onion.. YUM.. Then decided to make my own onion rings.. I grabbed 1 spanish onion from my farm market, sliced it into thin slices & soaked the rings in salt water for about 30-1hr. I then dipped the rings in a mixture of 2 c milk, 1 cup yogurt & 1 egg beaten together (you could use buttermilk for this too) then the dipped them into 2 cups flour with 1 T baking powder & salt & pepper. Then I fried them in batches in hot oil…Drained & sprinkled them with some celtic sea salt.. YUM, well they were a hit..1/2 the onion made a big bowl full & cost me about $1 to make..makes we laugh that restaurants charge so much for them ..onions are cheap.
