Homemade Salsa (for canning)

I have created a monster. I was so inclined to try canning my own salsa…well I am on the 3rd batch & it would appear that I am becoming a salsa factory. My family eats it as fast as I am making it.

12-14 large tomatoes (about 10 cups chopped), 1 -2 large sweet onion chopped, 3 chopped peppers, 2 hot peppers, 1/2 c chopped cilantro, 4 -5 minced garlic cloves, 1/2 c coarse salt, 2 tsp dried oregano, 1 cup apple cider vinegar, 1/2 cup sugar. You start by coring the tomatoes & put in slid on the bottom. Place the tomatoes in a few inches of water & steam for 5 min. Then cool & peel off the skins. Chop the tomatoes & put in a bowl. Add the onions, peppers, cilantro & garlic. Add in salt & stir. Allow to sit for a few hours to release the juice. Pour of the juice (and save it for something yummy). Add in oregano, vinegar, & sugar. Stir & put into a large pot. cover & cook on medium. Bring to a boil and simmer for 15 min& then put into sterilized pint jars with lids & rings. Put the pint jars in a pot , fill with water to the top of jars. Boil for 10 min. remove from the pot & sit on the counter. You will hear the lids pop, letting you know they have sealed…. Well I am off to make more salsa..
