Tomorrow is my dear Aunt Joan’s birthday. She loves lemon sponge & they only seem to have it out here in Lancaster.. So I am surprising her with this pie when I visit. I got the recipe from Lancaster Co. Amish Cookbook It’s Fannie Fisher’s recipe
Pie crust: 1/3 c cold salted butter (cut into pieces) , 1 1/4 c flour, 3-4 T cold water..into the food processor & rolled it out. Juice & rind(grated) of 1 lemon, 1 cup sugar, 3 eggs separated, 2 T butter(soft), 3 T flour, 1/2tsp salt, 1 1/2 c warm milk. Beat egg whites to stiff peaks & set aside. Cream butter, sugar & yolks together, add lemon, flour & milk. Stir until combined then fold the whites into the batter. Pour into unbaked pie crust. Bake 325 40-45 min.
