I love lentils. They are crazy high in protein & fiber. So when we were discussing a healthy side dish for our “healthy cooking class” I came up with this one
Lentil Pilaf
Small diced onion, ½ c diced carrot, 1 cup dried lentils, ½ c diced tomatoes, 2 cups chicken broth, fresh thyme & 2 T oil of your choice. Sautee onion & carrot in oil. Add tomatoes & lentils and chicken broth & thyme. Cover & simmer for 30 min. or until cooked
