2 cups flour, 3 T organic sugar, 2 tsp baking powder, 1/4 tsp salt, 6 T cold butter, 2tsp grated lemon peel, 2 T fresh strawberry jam, 1 egg beaten, 1/3 cup half & half
Ok how you make these makes all the difference: I use a food processor to not handle the dough too much. Add first 5 ingredients & pulse until combined then add remaining ingredients until it forms a ball. Then divide the dough in half & roll each to 1/2 thick. Cut each into 8 wedges. Place on an ungreased sheet pan. Put in the freezer until ready to bake.
Bake frozen in preheated oven at 375 until lightly browned on the bottom..Great with strawberry jam & homemade whipped cream… Like with pie crust you don’t want to handle the dough too much or they will be tough
