Margarita Steak Salad (can also use chicken)

July 12, 2013 By Kristie

12 Jul

Marinate a steak ( I used grass fed flank steak) in a prepared margarita mix for 4+hours. Grill to desired temperature & allow to rest for 15 minutes. Assemble mixed lettuces & top with chopped cucumbers, red onion, diced tomatoes, cheddar cheese & colored pepper. Slice your beef thinly & top on your salad. Top with Cilantro Lime Dressing: 1/2 cup cilantro (loose leaves), 1 small jalapeno(no seeds), 1 garlic clove, 3 T agave nectar or honey, 1 T Dijon mustard, 1/4 cup lime juice & 1/2 cup of grapeseed or olive oil & a pinch of salt & pepper.. I put all ingredients for the dressings in a bowl & used my emersion blender
