Last week a little farm store had raw chicken tenders for a great price sooooo… I decided to roast 3 – 4 pounds & made so many meals with them…
I seasoned the tenders with a little olive oil & Lawry’s Poultry seasoning & rub….
Then I roasted then on 2 baking sheets at 425 for 18-22 minutes…
I cooled them & used them for:
Lunch: chicken salad with chopped roasted almonds & red grapes & mayo over organic greens & sandwiches (even better with glazed nuts)
Dinner: Chicken & Broccoli alfredo: Steamed 1 head broccoli florets & made a quick alfredo (2 T butter sauteed with 1 clove of garlic then added 1 1/2 cup cream, 1 1/2 cups grated romano cheese) poured it cover cooked fettucine & added 2 cups of chicken with salt & pepper to taste (I reserved some of the broccoli water for more broth)
Chicken fried rice: Tossed the chicken with 1 small diced onion, 1 diced carrot, 1 cup peas, 3 cups cooked rice, 1 scrambled egg & soy sauce to taste (or use braggs liquid aminos)
Added to salads & did a salad works style salad bar…. took shredded cheese & made quesadillas… endless possibilities…..
