Mexican lasagna (gluten free)

1 pound ground beef, 1 small diced onion, 2 minced garlic cloves, 1 T chili powder, 1 T cumin, Salt & pepper. Brown hamburger, then add onion & spices ( you can use a taco seasoning packet with 3/4 cup water in place of chili powder & cumin but usually has msg though) . Then add 2 jars of salsa of your choice & 1 can of enchilada sauce to the meat mixture. This is your mexican meat sauce. Layer some of the sauce in a square baking dish, then layer soft (not fried) corn tortillas (about 2 – 3.. I cut then in half so they cover the whole area) then spoon a layer of meat sauce then spread 1/2 can refried beans & then 1 1/2 cup shredded mexican cheese or jack cheese, another layer of tortillas then sauce, then beans, top with tortillas & sauce again & bake covered for 1/2 hour 375. then uncover & top with 1 1/2 cups more of shredded cheese… Bake until golden brown You can use flour tortillas too but they do have gluten
