3 pounds of chicken legs & thighs ( I prefer skins removed but bones in)
2 T olive oil
Celtic Salt & Pepper
2 cups tomatoes diced (fresh or canned)
2 cups chicken stock or broth
4 potatoes cut up
2 fresh rosemary sprigs & 1 fresh thyme
1 t cumin & 1 t turmeric
6 cloves of peeled garlic (whole)
Roast chicken uncovered (single layer) in a large baking dish drizzled with olive oil & salt & pepper & garlic at 425 for 25 minutes. Then remove from oven & add all remaining ingredients , stir & cover. Reduce heat to 325 & cook for 45 minutes…. Serve with couscous … if you like olives you can add 1 cup of olives to this for great taste
