That’s right grilled cheese.. first you need to know I have never been a fan, that is until Saturday.. We had some dear friends over on Friday night and we had some leftover bruschetta with fresh mozzarella in it.. Well I had planned on chicken corn noodle soup but the chicken was still frozen and I needed something yummy in a hurry.. and it hit me..why not put the bruschetta in the grilled cheese & skip the American cheese (gag) for some provolone .. I drizzled my sliced Vienna bread with some good olive oil and made the sandwich with provolone & the bruschetta (diced tomatoes, garlic, basil, olive oil & fresh diced mozz).. It was a hit. Here are some other ideas (I’m hungry) : Proscuitto & Provolone, Pesto & Mozzarella, Grilled Chicken with apple & cheddar, Turkey Bacon & Farmers cheese, Ham & Raspberry with gruyere.. well you get the idea.. off to try one with bruschetta, olive & mozz..
