This recipe is for my gluten free lifestyle I realize not all celiac sufferes can have oats
1 cup of oat flour ( I just grind uncooked oatmeal)
1/4 cup coconut flakes ground
1 egg
1 T of sugar ( I used organic cane sugar)
2 teas baking powder
1 T oil ( I used coconut oil you can also use canola)
1 cup milk
Mix all ingredients together and pour into a waffle iron…Makes 6 waffles
I have been adding coconut to my diet because it is so good for you esp. for celiac
