OK so I am baking up a storm so I tried a new recipe. This is a mix of a old order mennonite recipe & a friend’s recipe…
So I baked this today & it has to be the best softest tastiest bread EVER!
2 cups boiling water, 1 cup quick oats, 1/2 stick butter, 1/2 cup warm water, 1 1/2yeast, 1 tsp, 1/2 cup brown sugar, 1 cup whole wheat flour ( I used spelt), 3 1/2 -4 1/2 cups unbleached bread flour ( I used occcident)
Pour boiling water over oats. Set aside until cool (or no longer hot), Stir in butter. Disslove yeast in warm water for 5 minutes. Add the oatmeal mixture to the yeast mixture. Then add salt, flour & brown sugar gradually & mix until smooth. Cover & let it rise until double then shape into loaves & place in greased loaf pans(makes 2 loaves) . Rise again & bake 350 about 350 minutes or until golden brown
Serve with honey butter: 1 stick of butter softened & mixed with 2 T honey & a dash of cinnamon
