Oven Southwest Chicken

004I hate it when it’s 4 and I still have no plan for dinner. Mexican is always a favorite in our house. So I took some boneless skinless chicken breasts & seasoned them with adobo & cumin, I then browned them in olive oil. I removed them for the pan and then added 1 onion sliced & 1 pepper sliced to the pan. I sautéed them for about 5 min and then topped the veggies with the chicken & put it on the oven for 15-20 min. I topped it with some fresh lime & cilantro & served it with a salad & some basmati rice *Make sure your pan is oven safe or simply use a baking dish.. You could do this with pork too
