Heat a frying pan .. season steaks with salt & pepper, olive oil & minced fresh garlic..then brown steaks on both sides…. Then remove from the pan & put into an 400 oven for about 8-10 minutes depending on how thick & desired donenes. For the sauce: In the pan you seared the steak , add 1 T olive oil, 1 clove minced garlic, 6 -8 mushrooms sliced & sautee..then add 1 T butter & 2 T flour & stir together then add 1 cup red wine & simmer (this cooks off the alcohol) then add 1 cup beef broth or stock.. If you don’t want to use wine.. use all stock & add some fresh herbs like rosemary & thyme… Drizzle sauce over your steaks … Please note do not cut steak immediately out of the oven. allow them to sit at least 5 minutes…Tenderloin (filet) & strip steaks work best…they are the most tender cuts* (..great now i’m hungry)
