Peach Stuffed French Toast

We miss summer! I made this for a special breakfast on Sunday morning.. a taste of summer.. 12 slices of bread, 1 quart of sliced peaches (frozen), 8oz of cream cheese, 3 eggs, 1/2 c milk, a dash of vanilla, butter for frying. Make sandwiches spreading the bread with (softened) cream cheese & sliced peaches. Beat together the egg with the milk & vanilla. Heat the griddle(or frying pan) with some butter. Dip the sandwiches in the egg on both sides & cook on medium until golden brown on both sides.. Top with syrup & powdered sugar.. I made a peach syrup with sliced peaches & sugar sweetened to taste.. bring to a boil & thickened with 1 T corn starch mixed with 2 T cold water.. 013
