We created this recipe for the wedding. It was inspired by one of our favorite summertime appetizers: Fresh mozzarella, tomato & peach crostini. It is a very simple blend of mixed greens ( romaine, spring mix & arugula) topped with garden tomato slices, fresh peach slices & fresh mozzarella. We then topped it with fresh basil. We used a simple dressing: 1/4 c oil, 2 T each apple cider vinegar & sugar and then drizzled with balsamic vinegar
