Pierogie Casserole

As if the brisket wasn’t “hearty enough” I served pierogie casserole with it. “In my kitchen NO ONE goes hungry”
5 large potatoes peeled & quarted & made into mashed potatoes, 2 cups cooked macaroni, 1 small onion diced & cooked in 1 -2 T butter, 1 cup shredded cheddar cheese. Mix all cooked ingredients together & salt & pepper to taste. Put into a greased baking dish & bake 350 for 35-45 minutes.. Can be made ahead
(again I used organic potatoes & protein pasta)
